Sautéed chicken, kielbasa, veggies, and spices simmered with rice in a flavorful chicken broth for a mildly spiced dish, perfect for those with a delicate palate.
Ingredients:
  • 1 onion, diced
  • 2 teaspoons olive oil
  • 2 boneless skinless chicken breasts, cut into bite-size pieces
  • 8 ounces kielbasa, diced
  • 1 green bell pepper, diced
  • 0.5 cup diced celery
  • 2 tablespoons chopped garlic
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon onion powder
  • 2 cups uncooked white rice
  • 4 cups chicken stock
  • 3 bay leaves
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon hot pepper sauce
Instructions:
  • In a large pot over medium-high heat, heat oil and sauté chicken and kielbasa until lightly browned, approximately 5 minutes.
  • Sauté onion, bell pepper, celery, and garlic until onion is tender and translucent, about 5 minutes. Season with cayenne, onion powder, salt, and pepper.
  • Stir in the rice, chicken stock, and bay leaves. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes until rice is tender. Finish by stirring in Worcestershire sauce and hot pepper sauce.
