Elevate traditional Cajun jambalaya with a unique twist: leftover chicken adds depth to the flavorful tangy sauce.
Ingredients:
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon garlic powder
  • 1 1/4 lb boneless skinless chicken breasts, cut into 1/2-inch cubes
  • 1 cup chopped onions
  • 1 package (12 oz) smoked Polish or kielbasa sausage, cut into 1/2-inch slices
  • 1 jar (16 oz) picante sauce
  • 1 can (14.5 oz) Italian-stewed tomatoes, undrained
  • 1 1/4 cups frozen sweet peas
  • 2 2/3 cups hot cooked instant rice
Instructions:
  • Season chicken cubes with zesty lemon-pepper and aromatic garlic powder. Heat oil in a large skillet over medium-high heat, then add the seasoned chicken and cook for 5 minutes, stirring often, until fully cooked.
  • Cook onions and sausage for 5 minutes until they are nicely browned. Add picante sauce and tomatoes, then simmer on medium heat for 12 minutes, stirring occasionally.
  • Add peas to the mixture and cook gently for 5-7 minutes until they are tender. Serve on top of steaming hot rice.
