Whip up a quick, vibrant summer salad with grilled chicken, lettuce, pecans, strawberries, and balsamic dressing in just 15 minutes.
Ingredients:
  • 1/2 lb uncooked chicken breast tenderloins
  • Salt and pepper
  • 1 head green oak lettuce (about 3 oz)
  • 1/4 cup pecans
  • 1/4 cup halved strawberries
  • 1/4 cup low-fat balsamic vinaigrette
Instructions:
  • Preheat the gas or charcoal grill.
  • Preheat a 10-inch grill pan on medium heat. Season chicken with salt and pepper, then grill for about 8 minutes, flipping occasionally, until the juices run clear and the thickest part reaches at least 165°F.
  • Distribute lettuce evenly on 2 plates. Arrange chicken, pecans, and strawberries on top. Drizzle with vinaigrette to taste.
