Grilled chicken with noodle salad

Delicious and versatile chicken noodle salad—a perfect meal prep option for a satisfying work lunch.
Ingredients:
  • 500g chicken tenderloin
  • 2 tsp sesame oil
  • 450g packet fresh hokkien noodles
  • 1 carrot, peeled, cut into matchsticks
  • 1 cucumber, cut into matchsticks
  • 1 small red capsicum, thinly sliced
  • 100g snow peas, sliced lengthways
  • 125.00 ml fresh coriander leaves
  • 44.00 gm sweet chilli sauce
  • 31.50 gm soy sauce
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Skewer the chicken and arrange them in a shallow ceramic or glass dish. Drizzle with olive oil and sesame oil, ensuring each skewer is fully coated.
  • In a heatproof bowl, soak the noodles in boiling water for 3 to 4 minutes until tender. Use a fork to separate the noodles, then drain and rinse them under cold water. In a large bowl, combine carrot, cucumber, capsicum, snow peas, coriander, and the noodles. Toss well to mix everything together.
  • Combine sweet chilli sauce and soy sauce in a jar with a secure lid. Add a dash of pepper. Shake well to blend the flavors. Drizzle the dressing over the salad and mix everything together.
  • Preheat a greased barbecue plate or chargrill over medium-high heat. Grill skewers for 3 minutes per side or until fully cooked. Enjoy with noodle salad sprinkled with sesame seeds.
