30-Minute Bruschetta Bake: Transform store-bought garlic bread into delicious croutons with bocconcini, cherry tomatoes, and basil. Drizzle with balsamic glaze for a budget-friendly meal at $5 per serving.
Ingredients:
  • 36.40 gm olive oil
  • 4 chicken breasts
  • 2 tsp Italian dried mixed herbs
  • 250g packet sliced garlic bread
  • 3 bocconcini, sliced
  • 40.00 ml balsamic vinegar
  • 250g cherry tomatoes, halved
  • 1 large radish, thinly sliced
  • Small fresh basil leaves, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced. In a frying pan over medium-high heat, heat 1 tbsp oil. Season both sides of the chicken with dried herbs and sear for 2 minutes on each side until golden. Then, transfer the chicken to a large baking tray.
  • Place the garlic bread slices on the tray and bake for 5 minutes. Top the chicken with the bocconcini and continue baking for 10-15 minutes until the chicken is cooked through and the bread is golden.
  • Combine the vinegar and remaining oil in a small jug, season to perfection. Place the tomato and radish over the chicken, sprinkle with fresh basil, then drizzle with the vinegar mixture and serve on individual plates.
