Creamy Italian salmon tray bake recipe

Quick and easy salmon dinner with zesty lemon and bold flavors, perfect for busy weeknights.
Ingredients:
  • 4 (about 180g each) skinless boneless salmon fillets
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 300ml light cooking cream
  • 125ml (1/2 cup) chicken stock
  • 2 tsp finely grated lemon rind
  • 60g (1/3 cup) drained, chopped semi-dried tomatoes
  • 60g (1/3 cup) pitted Sicilian olives, sliced
  • Crusty bread, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced. In a large non-stick frying pan over medium-high heat, heat half of the oil. Sear the salmon, top-side down, for 2 minutes until golden brown. Transfer to a plate.
  • Decrease heat to medium and pour in the rest of the oil. Sauté the onion, stirring frequently, until soft, about 5 minutes. Add garlic and cook, stirring, until fragrant, about 30 seconds. Mix in cream, stock, and lemon zest. Season to taste.
  • Spread the creamy mixture evenly in a 3cm-deep, 25 x 35cm baking tray. Place the cooked-side up salmon on top and scatter the olives and tomato around. Bake for 15 minutes or until the salmon is perfectly cooked.
  • Garnish with fragrant fresh basil and enjoy with crusty bread.
