Grilled Chicken Pasta Salad with Caramelized Onion, Broccoli and Mango

Delicious pasta salad with caramelized onions, broccoli, red bell peppers, and sweet mangoes - a favorite among Betty members!
Ingredients:
  • 1 package (8oz) uncooked campanelle or rotini pasta
  • 3 boneless skinless chicken breasts (1 lb)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped (3/4 cup)
  • 3 cups fresh broccoli florets
  • 2 ripe mangoes, seed removed, peeled, and cut up
  • 1 red bell pepper, chopped
  • 1 medium zucchini, quartered lengthwise, then cut crosswise into slices (1 cup)
  • 1 bottle (8 oz) Italian dressing
  • 1/2 teaspoon salt
Instructions:
  • Preheat gas or charcoal grill. Cook pasta according to package instructions. Rinse cooked pasta under cold water to chill, then drain well.
  • Grill the chicken over medium heat until cooked through, about 15 to 20 minutes, turning occasionally until the juices run clear and the internal temperature reaches 170°F. Let it cool slightly, then cut into 3/4-inch cubes.
  • Heat oil in an 8-inch nonstick skillet over medium-high heat. Add onion and cook uncovered for 5 minutes, stirring occasionally.
  • Continue cooking over gentle heat for 10 to 15 minutes more, stirring every 5 minutes, until the onion achieves a deep golden brown color. Allow it to cool slightly.
  • Mix together pasta, chicken, sweet caramelized onion, and the rest of the ingredients in a spacious bowl, tossing them delicately to ensure even coating. Cover and let it sit in the refrigerator for 30 minutes to allow the flavors to meld together perfectly.
