Caramelised onion, olive and goats cheese tart

Indulgent puff pastry tart with sweet onion, briny olives, and creamy goat's cheese is a delight for the taste buds!
Ingredients:
  • 4 brown onions, sliced
  • 16.00 gm brown sugar
  • 2 tsp red wine vinegar
  • Salt flakes and cracked black pepper, to season
  • 125.00 ml kalamata olives
  • 100g goats cheese, sliced into rounds
  • 1 tsp lemon thyme leaves
  • 1 block frozen puff pastry, thawed
Instructions:
  • Preheat the oven to 210°C. Heat oil in a large frying pan over medium-high heat. Saute the onions for 10 minutes until softened.
  • Stir in the brown sugar, vinegar, salt, and pepper, and cook for an additional five minutes. Then, take it off the heat and let it cool slightly.
  • Flatten the puff pastry into a 20cm x 30cm rectangle, approximately 5mm thick.
  • Spread a generous layer of onions over the pastry, making sure to leave a 3cm border. Add a layer of olives followed by crumbled goat cheese on top of the onions.
  • Bake for 30 minutes until the pastry is golden brown and puffed. Sprinkle with fresh thyme and serve the tart warm.
