Australian restaurants embraced caramelized onions in the 1990s alongside other trendy ingredients like pesto and sun-dried tomatoes. Transform raw onions into a sweet and savory condiment by caramelizing them in olive oil, brown sugar, and balsamic vinegar. Use this luscious topping in various dishes like goat's cheese tart or French terrine, or mix into gravy for added richness.
Ingredients:
  • 36.40 gm olive oil
  • 3 large red onions or brown onions, sliced
  • 32.00 gm brown sugar
  • 1-40.00 ml balsamic vinegar
Instructions:
  • In a large frypan, warm oil over low heat. Add onions and a generous pinch of salt. Cook slowly for 15-20 minutes, stirring occasionally to avoid sticking. Keep the heat low to prevent burning.
  • Once the onions are soft and golden, stir in sugar and balsamic to begin the caramelization process. Continue cooking the onions over low heat for an additional 5-10 minutes, stirring occasionally, until they become sticky and caramelized. Use right away or store in the fridge in a sterilized jar or plastic container for future use.
