Caramelized onions enhance the flavor of juicy chicken sausages with a touch of sweetness.
Ingredients:
  • 60g butter
  • 3 red onions, halved, thickly sliced lengthways
  • 55g (1/4 cup) caster sugar
  • 60ml (1/4 cup) red wine vinegar
  • 60ml (1/4 cup) chicken style liquid stock
  • 20.00 ml coarsely chopped fresh thyme
  • Salt & freshly ground black pepper
  • 800g kent pumpkin, peeled, deseeded, coarsely chopped
  • 125ml (1/2 cup) thin cream
  • 8 (about 960g) chicken sausages
  • Steamed green beans, to serve
Instructions:
  • In a large non-stick frying pan over medium-low heat, melt 40g of butter until foaming. Sauté the onion and garlic for 20 minutes until the onion is very soft. Sprinkle sugar and cook for 5 minutes until sugar dissolves and onion caramelizes. Pour in vinegar and stock, cook for 5-7 minutes until the sauce slightly thickens. Remove from heat and stir in thyme. Season with salt and pepper to taste.
  • Cook the pumpkin in a steamer basket over simmering water for 15 minutes until tender. Transfer to a medium saucepan with cream and butter. Mash until smooth using a potato masher or fork. Season with salt and pepper, then heat through on low for 2 minutes, stirring constantly.
  • Preheat a large frying pan over high heat. Add the sausages and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through.
  • Spoon the pumpkin mash onto plates, then place the sausages and caramelized onions on top. Serve right away with steamed green beans.
