Elevate collard greens with caramelized onions, garlic, crispy bacon, and creamy cannellini beans.
Ingredients:
  • 3 slices bacon, coarsely chopped
  • 1 red onion, thinly sliced
  • 2 tablespoons minced garlic, or to taste
  • 5 cups collard greens, stems and center ribs discarded and leaves chopped
  • 0.75 cup water, or as needed
  • 1 tablespoon brown sugar
  • 2 teaspoons cider vinegar
  • 1 teaspoon crushed red pepper flakes, or to taste
  • salt and black pepper to taste
  • 1 (15 ounce) can cannellini beans, drained and rinsed
Instructions:
  • In a spacious deep pan with a lid, cook the bacon over medium-high heat, stirring occasionally, until nicely browned, approximately 10 minutes. Once done, transfer the crispy bacon pieces to a plate and reserve for later use.
  • Lower the heat to medium-low and add sliced onion to the hot bacon fat. Sauté the onion until it starts to brown, scraping the flavorful bits off the pan for about 8 minutes. Stir in garlic and continue cooking for another 4 minutes. Mix in the bacon, add the collard greens, and gently toss until the greens are wilted, approximately 3 minutes.
  • Fill the pot with water almost to the top of the collard greens. Add brown sugar, vinegar, crushed red pepper, salt, and pepper. Bring to a boil, then cover, lower the heat, and simmer for 1 to 2 hours until the collard greens are very tender.
  • Combine the cannellini beans with the collard greens and simmer for about 30 minutes before serving.
