Collard Greens and Smoked Turkey

Experience the ultimate coast-to-coast comfort with this flavor-packed dish featuring smoked turkey, collard greens, and bell peppers.
Ingredients:
  • 1 large onion, chopped (1 cup)
  • 3 cloves garlic, finely chopped
  • 2 teaspoons sugar or honey
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon black pepper
  • 3 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 2 teaspoons white vinegar
  • 1 lb smoked turkey drumstick or wings, skin removed
  • 4 bunches fresh collard greens (about 4 lb), coarsely chopped
  • 1/2 cup coarsely chopped red bell pepper
  • 1/2 cup coarsely chopped green bell pepper
Instructions:
  • In a large 8-quart stockpot, combine onions, garlic, sugar, pepper flakes, black pepper, broth, and vinegar, stirring until thoroughly mixed. Add turkey and collard greens (pot may be full, but greens will wilt). Bring to a boil, then reduce heat to low, cover, and simmer for 50 minutes.
  • Add the bell peppers and stir gently. Cover the pan and let it simmer for an additional 10 minutes until the greens and bell peppers are tender.
  • Take the turkey out of the broth mixture and allow it to cool for about 10 minutes or until it's easy to handle. Remove the bones from the turkey and cut the meat into bite-size pieces before adding it back to the broth mixture.
