Quick and flavorful Instant Pot collard greens with smoked turkey wings and tangy vinegar.
Ingredients:
  • 2 teaspoon olive oil
  • 2 cups chopped white onion
  • 5 cloves garlic, finely chopped
  • 2 cups chicken stock
  • 2 teaspoons white vinegar
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 tablespoon seasoned salt (such as Lawry’s)
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 2 smoked turkey wings
  • 2 pounds chopped collard greens (about 2 bunches)
Instructions:
  • Heat olive oil in the pressure cooker on saute mode until shimmering, then cook onion and garlic until soft, about 2 minutes.
  • Pour in the stock, deglaze the pot: Add the stock to the pressure cooker and deglaze the bottom of the pot with a wooden spoon. Sprinkle in vinegar, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  • Layer half of the greens at the bottom of the pressure cooker, then nestle the turkey wings on top before adding the remaining greens on top.
  • Pressure cook the greens: Seal the Instant Pot with the lid locked and steam valve closed. Set the "pressure cook" or "manual" setting for 25 minutes on high pressure. Allow 5 to 15 minutes to reach pressure. When cooking time is up and the pressure cook beeps, perform quick release by using the handle of a wooden spoon to open the steam valve.
  • Once the steam has released, use tongs to remove the wings from the pot and let them cool. Discard the skin, shred the meat with a fork, and return it to the pressure cooker. Stir to combine.
