Indulgent peanut butter chocolate chip ice cream with a delicious twist of caramelized bacon.
Ingredients:
  • 5 slices bacon
  • 2 teaspoons brown sugar
  • 0.5 cup creamy peanut butter
  • 0.5 cup white sugar
  • 0.25 teaspoon salt
  • 1 cup whole milk
  • 1.5 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • 0.5 cup miniature chocolate chips
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), and then elegantly line a baking sheet with shimmering aluminum foil.
  • Lay bacon slices on the baking sheet and generously sprinkle one side with brown sugar for a sweet and savory twist.
  • Place the bacon in the preheated oven, ensuring to flip it halfway through, and bake until beautifully browned and caramelized, which should take about 10 to 12 minutes. Once ready, transfer the bacon to a wire rack to cool. After cooling, break it into bite-sized pieces and set aside for later use.
  • Combine peanut butter, sugar, and salt in a large mixing bowl. Use an electric mixer to blend until smooth. Pour in milk and mix on low speed until sugar is dissolved. Gently stir in the heavy cream and vanilla until just combined.
  • Transfer the mixture into an ice cream maker and follow the manufacturer's instructions for about 20 minutes. Sprinkle in chocolate chips and crumbled bacon gradually during the last few minutes of churning to prevent dissolving the bacon.
  • Place the ice cream in a sealed container and allow it to freeze for 3 hours to overnight.
