Whip up effortless gluten-free peanut butter chocolate chip cookies with just one bowl and a fork.
Ingredients:
  • 2 cups (480g) peanut butter
  • 1 cup (201g) granulated sugar
  • 1 cup (213g) brown sugar, firmly packed
  • 1 teaspoon (6 grams) salt
  • 1 teaspoon (4.8g) baking soda
  • 2 cups (320g) chocolate chips
Instructions:
  • Preheat the oven to 375° F and prepare baking sheets by lining two large ones with parchment paper.
  • Prepare cookie dough: In a large mixing bowl, blend together peanut butter, eggs, sugar, salt, and baking soda until fully combined using a fork. Ensure smooth and uniform texture with no visible sugar and fully incorporated eggs. Gently fold in chocolate chips using a rubber spatula.
  • Shape cookie dough: Portion out two tablespoons of dough with a spoon and form a ball, gently flattening it. Arrange approximately 15 cookies on each lined baking sheet, giving them room to spread about one inch apart as they bake.
  • Bake until cookies have cracked, then cool. Time to perfection: 13-15 minutes.
  • Once baked, allow the cookies to cool on the sheet for 5 minutes, then move them to a cooling rack. Store the cooled cookies in a tightly sealed container at room temperature.
