Salted oat, peanut butter and chocolate chip cookie squares

Elevate chocolate chip cookies with rich chocolate drizzle and crunchy salted pretzel topping.
Ingredients:
  • 150g butter, chopped, at room temperature
  • 100g (1/2 cup, firmly packed) brown sugar
  • 100g (1/2 cup) caster sugar
  • 1 egg
  • 130g (1/2 cup) smooth peanut butter
  • 150g (1 cup) plain flour
  • 2.00 gm baking powder
  • 90g (1 cup) traditional oats
  • 190g (1 cup) dark chocolate chips
  • 50g (1 cup) pretzels, coarsely chopped, plus 30 extra, to decorate
  • 300g dark chocolate, melted
Instructions:
  • Preheat the oven to 180C/160C fan forced. Grease a 20 x 30cm slice pan and line it with baking paper, leaving an overhang on the long sides.
  • In a bowl, use electric beaters to cream together butter, sugars, and vanilla until pale and creamy. Mix in the egg until well combined, then beat in the peanut butter. Sift in the flour and baking powder, then add oats, chocolate chips, and chopped pretzels. Stir everything together until combined. Press the mixture into a prepared pan and bake for 25-30 minutes until golden. Allow to cool completely in the pan before serving.
  • Drizzle melted chocolate over the cookie bar and sprinkle extra pretzels on top. Chill in the fridge for 20 minutes until firm. Cut into 30 squares.
