Salted Caramel Peanut Oat Flour Brownies

Indulge in our irresistible salted caramel peanut brownies - a gluten-free treat with a perfect fudgy texture and a delightful balance of sweet and salty flavors.
Ingredients:
  • 1/2 cup butter
  • 2/3 cup Dutch-processed cocoa powder
  • 1 1/4 cups sugar
  • 3 eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup Gold Medal™ Gluten Free Oat Flour
  • 1/2 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt
  • 1/2 cup semisweet chocolate chips
  • 1 cup roasted, lightly salted peanuts
  • 3 tablespoons gluten-free salted caramel topping
  • 1/4 teaspoon flaky sea salt
Instructions:
  • Preheat oven to 350°F. Line an 8x8-inch baking pan with foil, leaving a 2-inch overhang on two sides, and generously coat with cooking spray.
  • In a 2-quart saucepan, gently melt butter over medium-low heat. Take off the heat and whisk in cocoa powder until smooth. Allow to cool for 5 minutes.
  • Incorporate sugar into the mixture, followed by eggs and vanilla. Add oat flour, baking powder, and 1/2 teaspoon salt; blend until moist. Fold in chocolate chips and chopped 1/2 cup peanuts into the brownie batter.
  • Evenly distribute the batter in the pan and generously sprinkle the remaining 1/2 cup of peanuts on top.
  • Bake for 45 to 50 minutes until the center of the brownies puffs up and develops cracks, and a toothpick inserted 2 inches from the edge comes out with a few moist crumbs. Let them cool completely in the pan on a cooling rack for about 2 hours. Chill in the refrigerator for 30 minutes, then drizzle with caramel topping and sprinkle with 1/4 teaspoon flaky sea salt. Lift the brownies out of the pan using the foil overhang, and cut into 4 rows by 4 rows. Store them covered in the refrigerator.
