Sky-high peanut butter, chocolate and salted caramel crumpet stack

Irresistible crumpet stacks with peanut butter, salted caramel, and crunchy praline topping.
Ingredients:
  • 40.00 ml coarsely chopped salted roasted peanuts
  • 53.75 gm caster sugar
  • Pinch salt flakes
  • 82.50 ml caramel sauce
  • 50g dark chocolate, chopped
  • 40.40 gm light cream
  • 12 Golden Crumpets
  • 85.80 gm peanut butter
  • 4 small scoops vanilla ice-cream
Instructions:
  • Arrange the peanuts closely packed in a single layer on a sheet of baking paper. In a small frying pan over medium heat, combine the sugar and 2 tablespoons of water. Stir for 2 minutes until the sugar dissolves. Let it cook over medium-high heat for 3 minutes without stirring until the sugar boils and turns golden. Remove from heat and let it sit for 30 seconds until the bubbles settle. Carefully pour the mixture over the peanuts and allow it to cool.
  • Next, sprinkle a pinch of salt flakes into the caramel sauce and mix well until fully incorporated.
  • In a small saucepan, gently heat the chocolate and cream together until smooth and runny, stirring occasionally. This should take about 4 minutes.
  • Roughly chop the peanut praline. Place a crumpet on each plate, spread with peanut butter, add a layer of salted caramel sauce, top with another crumpet, a scoop of vanilla ice-cream, drizzle with chocolate sauce, and sprinkle with praline.
