Sky-high Yorkshire puddings in muffin cups, with fluffy pockets for rich gravy.
Ingredients:
  • 2 cups all-purpose flour
  • 4 large eggs
  • 2 cups milk
  • 0.25 cup vegetable oil
Instructions:
  • Preheat the oven to a toasty 450 degrees Fahrenheit (230 degrees Celsius).
  • Combine milk and eggs in a large bowl, then gradually whisk in flour until the mixture is frothy and well blended. Set aside.
  • Drizzle 1 teaspoon of oil into each muffin cup in a 12-cup tin.
  • Put the tin in the hot oven until the oil is smoking, 5 to 10 minutes. Take it out and promptly pour approximately 1/4 cup of batter into each cup.
  • Bake until pudding is puffed and golden, about 30-35 minutes. Serve hot.
