Chocolate and salted peanut caramel layer cake

Indulge in a decadent chocolate cake oozing with rich ganache and velvety salted caramel.
Ingredients:
  • 250g butter, softened
  • 161.25 gm caster sugar
  • 8.80 gm vanilla essence
  • 300.00 gm self-raising flour
  • 32.50 gm NESTLÉ BAKERS' CHOICE Cocoa
  • 169.95 gm milk
  • 180g dark chocolate, melted
  • 2 x 220g blocks milk chocolate, chopped
  • 166.65 gm thickened cream
  • 380g jar caramel spread (see Notes)
  • 125.00 ml roasted peanuts, chopped
  • 1.20 gm sea salt
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease two 6cm-deep, 20cm round cake pans and line the bases and sides with baking paper for easy release.
  • With an electric mixer, whip together butter, sugar, and vanilla for 5 minutes until fluffy. Incorporate eggs one at a time, mixing just until combined after each. Mix in half of the flour, cocoa, and milk until combined. Then add the rest of the flour, cocoa, and milk, mixing until just combined. Lastly, blend in the melted dark chocolate. Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for 30 to 35 minutes or until a skewer inserted in the center comes out clean. Allow to cool in pans for 15 minutes, then invert cakes onto wire racks to cool completely.
  • While you wait, prepare the Milk chocolate ganache by combining chocolate and cream in a microwave-safe bowl. Microwave on HIGH for 1 to 2 minutes, stirring halfway through, until smooth. Allow to sit for 20 minutes until thick and spreadable.
  • In a mixing bowl, blend together gooey caramel, crunchy peanuts, and a pinch of salt for a delectable salted peanut caramel mixture.
  • Split each cake in half to double the layers. Place one cake half on a plate. Spread a generous amount of ganache over the cake. Add a quarter of the caramel mixture. Place the second cake half on top. Repeat layering cake halves, ganache, and caramel mixture until you reach the final layer of cake. Finish by spreading the remaining ganache over the top and spooning over the remaining caramel mixture. Serve promptly to enjoy all the layers of flavors.
