Delight in decadent double chocolate and salted caramel ice cream sandwiches inspired by MasterChef contestant Kylie Millar.
Ingredients:
  • 225g butter, softened
  • 220g white sugar
  • 110g brown sugar
  • 1 Free Range Egg
  • 300g plain flour
  • 100g cocoa powder
  • 130g dark chocolate, roughly chopped
  • 2.40 gm salt
  • Tub Creamy Classics Salted Caramel Ice Cream
Instructions:
  • Heat your oven to 160C and prepare 2 baking trays by greasing and lining them with baking paper.
  • In a large bowl, combine butter and sugars and beat with an electric mixer until light and creamy. Mix in the egg until combined. Add flour, cocoa, and chocolate, then stir until a rough dough comes together.
  • Roll dough into walnut-sized balls weighing about 30g each and place them on lined trays. Gently press down on each ball to create discs. Bake for 12 minutes then allow them to cool completely on the trays.
  • Spoon a generous scoop of ice-cream onto one biscuit. Top with a second biscuit and repeat with the remaining biscuits and ice-cream.
