Salted caramel popcorn rocky road

Elevate your rocky road with caramel popcorn and salty roasted peanuts.
Ingredients:
  • 400g dark cooking chocolate
  • Sea salt flakes, to taste
  • 90g popping corn
  • 90g peanuts
  • 125g marshmallows, halved
  • 120g digestive biscuits, coarsely chopped
Instructions:
  • Prepare a 20cm x 30cm slice pan by greasing and lining it with baking paper, ensuring the paper overhangs on the two long sides.
  • Melt the chocolate in a heatproof bowl over a saucepan of simmering water, stirring occasionally until smooth. Allow it to cool for 5 minutes before using.
  • In a bowl, mix together popcorn, peanuts, marshmallow, and biscuit. Pour melted chocolate over the mixture and stir well. Transfer the mixture into a prepared pan and refrigerate for 2 hours until firm. Cut into pieces before serving.
