Triple-Caramel Popcorn Fudge

Indulgent fudge with dulce de leche, salted caramel, and caramel popcorn.
Ingredients:
  • 1 can (14 oz) dulce de leche (caramelized sweetened condensed milk)
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 2 cups caramel popcorn
  • 25 caramels, unwrapped
  • 2 tablespoons whipping cream
  • 1/4 teaspoon kosher (coarse) salt
  • 1 1/2 cups caramel popcorn
Instructions:
  • Prepare an 8-inch square pan by lining the bottom and sides with foil, ensuring the foil hangs over the edges for easy removal later; then, spray the foil with cooking spray.
  • In a 2-quart saucepan, gently warm the dulce de leche and chocolate chips together over low heat, stirring continuously until the chocolate is fully melted and the mixture is silky smooth (it will be thick); then take it off the heat. Add vanilla swiftly, followed by 2 cups of caramel popcorn. Spread the mixture in a pan.
  • Microwave caramels and cream in a medium microwavable bowl on High for 2 minutes, stirring every 30 seconds until smooth. Pour the melted caramel mixture over the fudge layer and spread gently. Top with salt and 1 1/2 cups caramel popcorn, pressing gently to adhere. Refrigerate for about 2 hours until firm. Cut into 1-inch squares (8 rows by 8 rows) and store covered in the refrigerator.
