Elevate salads with seasonal sweet potato in this gluten-free spiced lamb dish.
Ingredients:
  • 250g white sweet potato, peeled, cut into 1cm cubes
  • 250g orange sweet potato, peeled, cut into 1cm cubes
  • Olive oil cooking spray
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 400g lamb leg steaks
  • 18.20 gm olive oil
  • 80g baby spinach
  • 28.75 gm walnuts
  • 40g feta, crumbled
  • 56.88 gm olive oil
  • 40.00 ml white wine vinegar
  • 28.60 gm honey
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper. Arrange the potatoes in a single layer on the tray. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 25-30 minutes until golden and tender. Let them cool for a bit before serving.
  • Mix cumin and coriander in a shallow dish, season with salt and pepper, then add lamb and coat evenly.
  • In a large non-stick frying pan over medium-high heat, sear the lamb for 3 minutes on each side for a perfect medium cook. Transfer to a plate, cover, and let rest for 5 minutes before thinly slicing.
  • Prepare the vinaigrette by combining oil, vinegar, and honey in a bowl. Whisk until well combined.
  • Combine the fresh spinach, crunchy walnuts, creamy feta, tender potato, and succulent lamb in a big bowl. Drizzle with flavorful vinaigrette and mix well. Enjoy your delicious salad.
