Sweet potato & blue cheese frittata

Ingredients:
  • 1 large sweet potato
  • 3 tablespoons olive oil
  • 2 medium red onions
  • 6 large free-range eggs
  • 100 g blue cheese
  • 1 whole nutmeg for grating
Instructions:
  • - Preheat the oven to 190ºC/gas 5. - Rub sweet potato with 1 tablespoon of oil and season with sea salt and black pepper. Bake for 40 minutes until tender. Let it cool. - Peel and thinly slice onions. Heat 1 tablespoon of oil in a 26cm ovenproof frying pan. Cook the onions covered for 20 minutes until soft. Let it cool. - Whisk eggs in a bowl, crumble in cheese, and mix in the onions and scoops of sweet potato flesh. Season with nutmeg. - Coat the pan with 1 tablespoon of oil, pour in the egg mixture, and cook until eggs start to set. - Finish cooking in the oven for 10 minutes until set. Serve with a seasonal salad.
