Caramelised onion and blue cheese sweet potatoes

Satisfying potato parcels that are piping hot and filling.
Ingredients:
  • 2 large orange sweet potatoes (see Notes)
  • 3 medium brown onions, thinly sliced
  • 32.00 gm brown sugar
  • 20.00 ml balsamic vinegar
  • 20.00 ml fresh rosemary, finely chopped
  • 75g blue cheese
  • 1 tsp fresh thyme, finely chopped
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Arrange sweet potatoes on a baking tray, then generously drizzle with 2 tablespoons of oil. Season with salt and pepper. Roast for 50 minutes to 1 hour until tender. Let them cool for 10 minutes before enjoying.
  • In a large frying pan, heat the remaining oil until shimmering. Add the onion and cook, stirring occasionally, until golden brown, about 10 to 15 minutes. Sprinkle sugar and vinegar over the onions and cook, stirring occasionally, until caramelized, about 5 minutes. Finally, mix in the rosemary, then remove from heat and cover to keep warm.
  • Preheat the grill on high heat. Make a lengthwise slit in each potato, keeping the base intact. Place the potatoes back on the baking tray. Fill each potato with the onion mixture and sprinkle cheese on top. Grill for 1 minute or until the cheese starts to melt. Serve with a sprinkle of thyme on top.
