Caramelised onion and blue cheese tarts

Savory blue cheese and sweet caramelized onions combine beautifully in this delicious tart.
Ingredients:
  • 2 large (about 450g) brown onions, thinly sliced
  • 20.00 gm caster sugar
  • 1 sheet (25 x 25cm) frozen ready rolled butter puff pastry (Pampas brand), just thawed
  • 50g piece hard blue cheese (King Island Bass Strait brand), thinly sliced
  • 20.00 ml rosemary leaves
Instructions:
  • Place an oven rack on the highest level. Preheat your oven to 230°C. Line a baking tray with shiny side down foil.
  • In a large non-stick frying pan over high heat, heat oil. Add onions and sugar, stirring, cook for 3 minutes until softened. Reduce heat to medium-high, continue stirring for 3-4 minutes until caramelized. Set aside.
  • Cut 4 discs from the pastry sheet using a 10cm diameter cutter. Use a 9cm diameter cutter to create a border on each disc without cutting all the way through. Place the pastry discs, border-side up, on the lined tray.
  • Spread the onion mixture in the center of each pastry disc, sprinkle with blue cheese and rosemary leaves. Bake on the top shelf in a preheated oven for 10 minutes or until the pastry is puffed and golden. Serve right away.
