Creamy blue cheese pasta with caramelized onions and spinach.
Ingredients:
  • 1 pound uncooked orzo pasta
  • 3 tablespoons olive oil
  • 4 onions, sliced
  • 6.5 ounces blue cheese, crumbled
  • 3.5 ounces mascarpone cheese
  • 2 cups shredded spinach
  • salt and pepper to taste
Instructions:
  • Bring a large pot of salted water to a boil. Cook pasta until al dente, about 8 to 10 minutes. Drain.
  • While the pasta is cooking, gently heat butter and oil in a large skillet until shimmering. Sauté onion in the fragrant mixture until golden brown, for 20 to 30 minutes. Transfer the caramelized onions from the pan to drain on paper towels with a spoon.
  • Combine the creamy blue cheese, rich mascarpone, and flavorful onion in a large bowl. Mix thoroughly. Toss this luscious cheese mixture with fresh spinach and the cooked pasta. Season with a sprinkle of salt and pepper to taste, then serve and enjoy!
