Simmered figs with caramelized onion, balsamic, and blue cheese on crackers or baguette for a delicious sweet and savory spread.
Ingredients:
  • 1 large red onion, chopped
  • 2 cups chopped fresh Black Mission figs
  • 0.25 cup aged balsamic vinegar
  • 2 tablespoons white sugar, or to taste
Instructions:
  • In a saucepan over medium heat, heat olive oil and sauté onion until caramelized, covering and stirring occasionally for 20-25 minutes on medium-low heat.
  • Combine figs and onions in a pan, stirring occasionally until figs soften and start to break down, about 10-15 minutes. Add balsamic vinegar and simmer until liquid evaporates, about 5-10 minutes. Gradually stir in sugar until reaching desired sweetness. Enjoy hot or cold.
