Quick and tasty Persian haloumi fig fattoush salad - a delicious dinner option.
Ingredients:
  • 1 Lebanese bread
  • 350g mixed tomatoes, halved, larger ones sliced
  • 2 Lebanese cucumbers, thinly sliced
  • 4 ripe figs, thickly sliced
  • 1/2 red onion, thinly sliced
  • 375.00 ml combined fresh herb leaves (such as mint and continental parsley)
  • 250g haloumi, sliced
  • 36.40 gm extra virgin olive oil
  • 42.00 gm fresh lemon juice
  • 2 tsp pomegranate molasses
  • 2.00 gm brown sugar
Instructions:
  • Preheat the oven grill to high. Coat both sides of the bread with olive oil, season, and place on a baking tray. Grill for 2 minutes, turning occasionally, until golden and crisp. Allow to cool before breaking into shards.
  • Arrange tomato, cucumber, fig, onion, and herbs elegantly on individual serving plates.
  • In a small bowl, whisk ingredients together and season to taste for a delicious dressing.
  • Preheat a non-stick frying pan over medium-high heat, then lightly coat with olive oil spray. Cook haloumi, flipping occasionally, until beautifully golden brown, about 1-2 minutes.
  • Plate the haloumi and bread pieces evenly. Pour the dressing over the top and gently mix everything together right before serving.
