Asparagus and Persian feta salad

Create a delicious asparagus and pea side dish with only four ingredients.
Ingredients:
  • 4 bunches asparagus, trimmed
  • 500g butter beans, topped
  • 500g sugar snap peas, trimmed
  • 175g marinated Persian feta (see note)
Instructions:
  • Bring a large frying pan of water to a boil over high heat. Add asparagus and cook for 2 minutes, then transfer to a bowl of chilled water using tongs. Drain. Return water to a boil and cook beans for 3 minutes and peas for 1 minute. Transfer to the bowl of chilled water, then drain. Pat dry the asparagus, beans, and peas with paper towels before placing them in a large bowl.
  • Drain the feta and reserve 2 tablespoons of the oil. Crumble the feta over the asparagus, beans, and peas. Drizzle with the reserved oil, season with freshly ground black pepper, and gently toss to combine before serving.
