Indulgent asparagus quiche with Swiss, Cheddar, and crispy onions - ideal for brunch.
Ingredients:
  • 2 teaspoons olive oil
  • 1 bunch fresh asparagus, trimmed and cut into 1/2-inch pieces
  • 1 pastry for a 10-inch deep-dish pie crust
  • 6 large eggs, beaten
  • 0.75 cup milk
  • 0.5 cup half-and-half cream
  • 1 (2.8 ounce) can French-fried onions
  • 6 ounces shredded Swiss cheese
  • 5 ounces shredded Cheddar cheese
  • 1 green onion, chopped
Instructions:
  • In a skillet over medium heat, sizzle asparagus in olive oil, stirring occasionally, until just tender, about 5 to 10 minutes.
  • Preheat the oven to 375°F (190°C), then gently fit the pie pastry into a 10-inch deep-dish pie pan.
  • In a bowl, mix together asparagus, eggs, milk, half-and-half, French-fried onions, Swiss cheese, Cheddar cheese, and green onion. Transfer the mixture into the pie pastry.
  • Bake in the oven until quiche is cooked through and a knife inserted in the center comes out clean, approximately 45 minutes. Let it rest for 10 minutes before serving.
