Maple Asparagus Mini Frittatas

Delicious asparagus and Swiss cheese mini frittatas with a touch of maple syrup - perfect for a quick and satisfying breakfast for the whole family.
Ingredients:
  • 3 spears fresh asparagus, cut in half
  • 1 serving cooking spray (such as Pam®)
  • 0.25 cup milk
  • 4 large eggs
  • 4 teaspoons maple syrup
  • salt and ground black pepper to taste
  • 0.25 onion, diced
  • 0.25 cup shredded Swiss cheese
Instructions:
  • Place a steamer insert in a saucepan filled with water just below the steamer. Once boiling, add asparagus, cover, and steam until tender, for 2 to 4 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat 6 muffin cups with cooking spray.
  • Combine milk, eggs, maple syrup, salt, and pepper, and whisk until smooth in a bowl.
  • Fill each muffin cup with 1 asparagus half and a generous sprinkle of onion. Pour the egg mixture evenly into each cup and top with a generous amount of Swiss cheese.
  • Bake in the preheated oven until the frittatas are golden and puffed, for approximately 25 minutes. Remove promptly and allow to cool briefly to prevent deflation, similar to a souffle.
