Elevate your rack of lamb with a heavenly touch of maple syrup for a sweet and savory twist.
Ingredients:
  • 500g chat potatoes, halved
  • 2 x 8 racks lamb, frenched
  • 9.20 gm olive oil
  • 2 sprigs fresh rosemary, leaves removed
  • 4 flat mushrooms
  • 2 Roma tomatoes, halved
  • 3 garlic cloves, sliced
  • 84.38 gm maple syrup
  • 1 bunch asparagus, trimmed, cooked
Instructions:
  • Preheat oven to a delightful 180°C.
  • In a baking dish, layer the potatoes and top with racks. Drizzle with olive oil and sprinkle with fragrant rosemary.
  • Roast lamb for 20 minutes, then enhance with mushrooms, tomatoes, and garlic. Roast for an additional 5-10 minutes until the racks reach desired doneness.
  • Take the racks out of the dish and let them rest, covered with foil, for 10 minutes.
  • Drizzle maple syrup over vegetables and roast for an additional 5-10 minutes until tender. Add asparagus and mix well.
  • Cut each rack of lamb in half, then serve the lamb with vegetables.
