Quick and delicious garlic asparagus and tomato side dish pairs perfectly with any meal. Ready in minutes!
Ingredients:
  • 1 pound thin asparagus spears, trimmed and cut in half
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons minced garlic
  • 1 large tomato, seeded and chopped
Instructions:
  • Fill a large skillet with a luxurious 1 inch layer of water. Gently place the asparagus in the skillet, cover it, and let the water come to a gentle boil on high heat. Allow the asparagus to cook until beautifully bright green and tender, for approximately 2 minutes. Using tongs, gracefully transfer the cooked asparagus to a waiting plate.
  • In a skillet, heat oil over medium heat. Sauté garlic until fragrant for about 1 minute. Stir in tomatoes and cook for 1 minute until heated through. Season with salt and pepper. Add asparagus and cook until hot for about 2 minutes.
