Asparagus wrapped in bacon and baked with creamy Taleggio cheese, perfect as a side or appetizer.
Ingredients:
  • 1 tablespoon olive oil
  • 1 clove garlic, thinly sliced
  • 12 spears fresh asparagus, trimmed
  • 1 cup grape tomatoes, halved
  • 1 teaspoon lemon juice
  • 4 slices hardwood smoked bacon
  • 0.75 pound Taleggio cheese, cut into 1/4-inch pieces
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • In a large skillet over medium heat, sauté garlic in olive oil until fragrant, about 2 minutes.
  • Add asparagus and grape tomatoes to the fragrant garlic, then generously drizzle with refreshing lemon juice. Cook and stir until asparagus are tender, about 5 to 7 minutes.
  • Wrap each asparagus spear with a slice of bacon to create bundles. Place the bundles on a baking sheet.
  • Arrange the sautéed grape tomatoes elegantly around the asparagus bundles.
  • After 5 minutes in the preheated oven, top the asparagus with Taleggio cheese and continue baking.
  • Bake until the bacon is golden and crisp, about 5 to 7 minutes longer.
