Bacon-wrapped asparagus with crunchy breadcrumbs is a 20-minute standout side dish.
Ingredients:
  • 1/4 cup Progresso™ Italian style panko crispy bread crumbs
  • Pinch gray salt
  • Freshly ground black pepper
  • 1 tablespoon finely chopped fresh parsley
  • 1 teaspoon freshly grated lemon peel
  • 1 tablespoon freshly grated Parmesan cheese
  • 1 teaspoon salt
  • 1 large bunch (about 1 lb) fresh asparagus, trimmed to even lengths
  • Unsalted butter for greasing baking dish
  • 2 tablespoons extra-virgin olive oil
  • Additional gray salt and freshly ground black pepper
  • 8 thin slices prosciutto (4 oz)
Instructions:
  • Preheat oven to 400°F. Combine bread crumbs, salt, and pepper in a small bowl. Stir in parsley, lemon peel, and cheese until evenly mixed.
  • In a 3-quart saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil. Add the asparagus and simmer for about 4 minutes until crisp-tender. Drain the asparagus.
  • Grease a shallow baking dish with butter. Combine cooled asparagus with 2 tablespoons of olive oil and season with salt and pepper. Divide asparagus into 4 equal portions. Lay 2 slices of prosciutto on a work surface, slightly overlapping each other. Place 1 asparagus portion on top and roll up gently in the prosciutto. Transfer to the baking dish. Repeat with the remaining prosciutto and asparagus. Lightly press down the tops of the bundles and sprinkle with topping.
  • Bake for approximately 10 minutes until golden and crispy. Serve right away.
