Elegant asparagus bundles with creamy cheese and savory smoked salmon, perfect for entertaining.
Ingredients:
  • 12 spears of purple asparagus, ends trimmed
  • 250.00 ml baby spinach leaves
  • 20.00 ml chopped chives
  • 120g cream cheese, softened
  • 12 small slices smoked salmon
  • 100ml extra virgin olive oil
  • Juice of 1/2 lemon
Instructions:
  • Briefly blanch asparagus in boiling water for 1 minute, then transfer to ice water to cool. Drain and set aside.
  • Quickly blanch spinach in boiling, salted water for 20 seconds. Chill in ice water, then drain and gently squeeze in a tea towel to remove excess water before finely chopping.
  • Combine fresh spinach, fragrant chives, and creamy cream cheese in a food processor; pulse until fully mixed.
  • Lay the salmon flat and spread 1 1/2 tablespoons of the cream cheese mix down the center. Top with an asparagus spear. Roll the salmon around the filling and refrigerate for 30 minutes.
  • Combine the olive oil, lemon juice, and 1/3 teaspoon black pepper to make a zesty dressing. Drizzle it over the asparagus spears before serving.
