Tangy creamed asparagus with mushrooms, made with cream cheese and Greek yogurt.
Ingredients:
  • 1 pound asparagus spears
  • 1 tablespoon unsalted butter
  • 0.5 cup beef broth
  • 0.5 teaspoon garlic powder
  • 1 cup sliced fresh mushrooms
  • 0.25 cup whipped cream cheese
  • 2 tablespoons Greek yogurt
  • 0.75 teaspoon ground nutmeg
  • 0.25 teaspoon ground black pepper
Instructions:
  • 1. Rinse the asparagus under cool water to remove any grit. Snap off the tough woody ends using your fingers; they will naturally break where the tender stem begins. Pat dry with kitchen towels and cut into 1-inch pieces.
  • In a large skillet over medium-high heat, melt butter until sizzling. Add fresh asparagus, beef broth, and a sprinkle of garlic powder. Cover and cook, stirring occasionally, until asparagus is perfectly crisp-tender in just 5 to 7 minutes.
  • Cook sliced mushrooms until they're tender, for about 3 to 5 minutes more. Then, lower the heat and incorporate cream cheese, yogurt, nutmeg, and pepper. Stir occasionally and cook until the cheese is melted and the mixture is creamy, about 3 minutes.
