Creamy leeks with Parmesan: a delectable side dish for any meal.
Ingredients:
  • 3 large leeks
  • 2 tablespoons unsalted butter
  • 0.5 cup whipping cream
  • 1 teaspoon Dijon mustard
  • salt and freshly ground black pepper to taste
  • sprinkle of freshly-ground nutmeg
  • 2 tablespoons freshly grated Parmesan cheese
Instructions:
  • Prepare the leeks by trimming and discarding the tough outer leaves. Slice the white and light green parts into 1/4-inch rings, soak them in a large bowl of water, gently agitate to remove any dirt, then drain in a colander.
  • In a hot skillet, melt butter then add leeks and cook until tender and lightly browned, around 2 minutes. Add garlic and sauté until fragrant, about 30 seconds to 1 minute.
  • Combine the whipping cream and Dijon mustard, then pour the mixture into the skillet, stirring until fully combined. Reduce heat to low and simmer until the leeks are tender yet still slightly crisp, about 6 to 8 minutes (be careful not to overcook). Season with salt and pepper, then remove the skillet from the heat.
  • Finish with a sprinkle of fragrant nutmeg and a generous dusting of savory Parmesan cheese before serving promptly.
