Transform your pasta bake into a delicious one-dish meal with savory bacon and fresh asparagus. Perfect for the whole family!
Ingredients:
  • 125.00 ml fresh white breadcrumbs
  • 165.00 ml grated reduced-fat pizza cheese
  • 375g dried rigatoni pasta (see note)
  • 1 bunch asparagus, trimmed, chopped
  • 4 rashers 97% fat-free bacon, chopped
  • 50g reduced-fat spread
  • 82.50 ml plain flour
  • 772.50 gm skim milk
  • 23.40 gm wholegrain mustard
  • 82.50 ml chopped fresh chives
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced, and generously grease a 5cm-deep, 22cm x 27cm (base) baking dish. In a bowl, mix together the breadcrumbs and 1/3 cup of cheese, then set it aside.
  • In a large saucepan of boiling, salted water, cook pasta according to packet instructions until tender. Add asparagus for the last 2 minutes of cooking. Drain, rinse with cold water, and return to the pan.
  • Heat a non-stick frying pan over medium-high heat, then crisp the bacon for 3 to 4 minutes before adding it to the pasta.
  • In a small saucepan over medium heat, melt spread. Add flour and stir with a wooden spoon for 1 to 2 minutes until mixture bubbles. Remove from heat and gradually stir in milk. Return to medium heat, bring to a boil, then reduce heat to low. Cook for 5 minutes, stirring until thickened. Stir in mustard, chives, and remaining cheese. Season with salt and pepper and cook for 1 minute until cheese melts.
  • Mix in the sauce with the pasta until well combined, then transfer to a baking dish. Top with breadcrumbs and bake until golden brown, about 20-25 minutes. Rest for 5 minutes before serving.
