Loaded smoky sweet potato fries

Indulgent loaded sweet potato fries with cheesy goodness, smoky paprika, and crispy pancetta.
Ingredients:
  • 2 x 500g pkts Sweet Potato Chips
  • 5.00 gm smoked paprika
  • 2 tsp garlic powder
  • 4 slices pancetta
  • 100g mozzarella
  • 1 spring onion, thinly sliced
  • Sour cream, to serve
  • Coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Preheat your oven to 180°C. Prepare two large baking trays by lining them with baking paper.
  • Combine sweet potato chips, oil, paprika, and garlic powder in a large bowl. Toss until evenly coated. Arrange in a single layer on lined trays. Bake for 35 minutes, flipping halfway through, until tender and heated through.
  • Heat a large non-stick frying pan over high heat. Cook the pancetta until golden on each side, about 1 minute. Transfer to a paper towel-lined plate to cool slightly, then break into small pieces.
  • On one of the lined trays, mix together all the sweet potato chip mixture and sprinkle with mozzarella. Bake for 5 minutes, or until the cheese melts. Top with pancetta and spring onion, then finish with a dollop of sour cream and a sprinkle of fresh coriander. Season to taste and serve with lime wedges on the side.
