Smoky ham and mushroom strata

Delight your loved ones with a savory ham and mushroom strata loaded with gooey cheese, juicy tomato, and crispy bread.
Ingredients:
  • 250g white batard, ends trimmed, cut into 1cm slices diagonally
  • 150g sliced triple-smoked ham, quartered
  • 100g cup mushrooms, sliced
  • 6 eggs
  • 2 garlic cloves, crushed
  • 117.50 gm light sour cream
  • 64.38 gm milk
  • 125.00 ml grated vintage cheddar
  • 2.50 gm smoked paprika
  • 40.00 ml chopped fresh oregano leaves, plus extra to serve
  • 1/2 x 250g punnet cherry tomatoes, halved
  • Mixed salad, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a 17cm (base), 23cm (top) round dish with a 5cm depth and line a baking tray with baking paper.
  • - In a prepared dish, stand the bread, ham, and mushroom upright, following the picture as your guide. - In a bowl, whisk together eggs, garlic, sour cream, milk, cheddar, paprika, and oregano. Season the mixture to taste. - Pour the egg mixture over the bread, ham, and mushroom in the dish. Allow it to stand for 10 minutes.
  • Bake until the egg is beautifully golden and just beginning to set, typically about 35 to 40 minutes.
  • Place the tomato on the prepared tray, then spray it with oil and season with salt and pepper. Bake in the oven along with the strata for 15 minutes, or until the tomato begins to char.
  • Allow the strata to rest for 2 minutes, then garnish with tomato slices and a touch more oregano. Accompany with a side salad.
