Hearty slow-cooked ham and navy bean stew with a simple vegetable twist for a delicious meal.
Ingredients:
  • 1 lb cooked ham, cut into 1/2-inch cubes (3 cups)
  • 2 cups water
  • 1 cup dried navy beans
  • 2 medium stalks celery, sliced (1 cup)
  • 2 medium carrots, sliced (1 cup)
  • 1 small onion, chopped (1/4 cup)
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon liquid smoke
  • 1/4 cup chopped fresh parsley
Instructions:
  • Combine all the ingredients in a 3 1/2- to 4-quart slow cooker, excluding the parsley.
  • Cover the dish and simmer gently on low heat for 10 to 12 hours.
  • Add a generous sprinkle of fresh parsley right before serving.
