Creamy ham and basil pasta bake

Cheesy pasta bake with smoky ham.
Ingredients:
  • 375g penne rigate
  • 50g butter
  • 82.50 ml plain flour
  • 1 litre milk
  • 250.00 ml finely grated parmesan
  • 200g sliced smoked ham, chopped
  • 250.00 ml fresh basil leaves, torn
  • 1 tsp finely grated lemon rind
  • 125.00 ml grated mozzarella
  • Mixed salad leaves, to serve
Instructions:
  • Boil pasta in salted water according to package instructions until tender. Drain and return to the pot.
  • Melt butter in a saucepan over medium heat until foaming, about 2 minutes. Add flour and cook while stirring with a wooden spoon until mixture bubbles, about 1 minute. Remove from heat. Slowly stir in milk, adding 1/4 cup at a time, and continue stirring constantly to avoid lumps. Return to medium heat, and cook for 5 minutes until the sauce boils and thickens. Finally, mix in half of the parmesan.
  • Preheat oven to 180C/160C fan-forced, then mix the white sauce with pasta in a pan. Stir in ham, basil, and lemon rind, mixing well. Season with salt and pepper to taste.
  • Prepare a 2-liter, 16cm x 22cm baking dish by greasing it. Transfer the pasta mixture into the dish. Top with mozzarella and the rest of the parmesan. Bake until golden, about 35 minutes. Let it stand for 10 minutes before serving with salad leaves.
