Quick healthy and creamy ham pasta

Creamy, healthy pasta - perfect for a quick weeknight dinner!
Ingredients:
  • 280g dried casarecce pasta
  • 150g (1 cup) frozen peas
  • 4.60 gm extra virgin olive oil
  • 3 garlic cloves, finely chopped
  • 3 green shallots, trimmed, sliced
  • 60ml (1/4 cup) white wine
  • 250.00 ml fresh basil leaves
  • 100g (1/2 cup) light cream cheese, chopped
  • 125g shaved 97% fat-free smoked ham, torn or shredded
Instructions:
  • Cook the pasta in a large saucepan of boiling water according to package instructions until al dente. Add the peas during the last 2 minutes of cooking. Remember to set aside 125ml (1/2 cup) of the cooking liquid before draining.
  • In a non-stick frying pan over medium-high heat, heat the oil. Sauté the garlic and half the shallot for 2 minutes until fragrant. Pour in the wine and simmer for 1-2 minutes until it reduces. Tear half of the basil leaves.
  • In a bowl, mix cream cheese and reserved pasta water until smooth. Season with pepper, then add to the frying pan and promptly remove from heat.
  • Drain the pasta, then return it to the pan. Add in the creamy cream cheese mixture, savory ham, and fresh torn basil. Toss everything together using tongs until well combined. Finish by sprinkling with the remaining shallot and basil.
