Ingredients:
  • 250g spiral pasta
  • 3 cobs corn, kernels removed (see note)
  • 250g green beans, trimmed, cut into 3cm pieces
  • 250g lean leg ham, cut into short strips
  • 1 red capsicum, cut into thin strips
  • 3 ripe tomatoes, chopped
  • 62.50 ml flat-leaf parsley leaves, finely chopped
  • 1 small avocado, peeled, stone removed, chopped
  • 66.25 gm 99% fat-free salad dressing
Instructions:
  • Prepare the pasta as directed on the packet until al dente. Drain the pasta and transfer it to a spacious bowl.
  • While waiting, bring a small saucepan of water to a boil. Add corn and beans, and cook for 1 minute until beans are bright green. Drain and refresh under cold running water. Pat dry with a paper towel.
  • Combine corn, beans, ham, capsicum, tomato, and parsley with warm pasta. Toss thoroughly. Gently mix in avocado, dressing, salt, and pepper. Serve.
