Delicious pasta salad with olives, roasted red peppers, cheese, salami, and zesty Italian dressing - perfect for picnics!
Ingredients:
  • 1 (16 ounce) package tri-color rotini pasta
  • 1 small red onion, diced
  • 1 cup diced roasted red peppers
  • 1 cup cubed mozzarella cheese
  • 1 (6 ounce) jar marinated artichoke hearts, drained and chopped
  • 0.25 pound salami, diced
  • 0.75 cup sliced stuffed green olives
  • 1 (4 ounce) can sliced black olives
  • 0.5 cup sliced pepperoncini peppers
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon garlic powder, or to taste
  • 1 pinch seasoned salt, or to taste
  • ground black pepper to taste
  • 0.33333334326744 cup Italian-style salad dressing (such as Newman's Own®)
  • 0.25 cup mayonnaise (such as Best Foods®)
  • 0.5 cup shredded Parmesan cheese
Instructions:
  • Boil a large pot of lightly salted water. Cook rotini until al dente, about 8 to 10 minutes. Drain and rinse with cold water to cool.
  • Combine rotini pasta, vibrant red onion, smoky roasted red peppers, creamy mozzarella cheese, flavorful artichoke hearts, savory salami, briny green olives, rich black olives, tangy pepperoncini peppers, fragrant Italian seasoning, pungent garlic powder, zesty seasoned salt, and aromatic black pepper in a spacious bowl.
  • Combine Italian-style dressing and mayonnaise in a small bowl, then drizzle over rotini mixture and mix until coated. Stir in Parmesan cheese thoroughly. Chill salad for a minimum of 2 hours before serving.
