Layered Curry Pasta Salad

Curry-infused pasta salad: a flavorful journey ready in just 30 minutes.
Ingredients:
  • 1 box Betty Crocker™ Suddenly Salad® ranch & bacon pasta salad mix
  • 3 cups torn salad greens
  • 2 cups shredded carrots
  • 2 cups frozen sweet peas, cooked, drained
  • 2 medium tomatoes, chopped (1 1/2 cups)
  • 1 1/2 cups mayonnaise
  • 1 teaspoon curry powder
  • 1/2 cup sliced almonds, toasted
Instructions:
  • Pour the Pasta mix into a 3-quart saucepan filled 2/3 full with boiling water. Allow it to gently boil uncovered for 12 minutes, stirring occasionally.
  • Rinse the pasta under cold water and shake off excess water.
  • In a 4-quart glass salad bowl or a 13x9-inch glass baking dish, beautifully layer salad greens, carrots, peas, and tomatoes.
  • In a large bowl, combine seasoning mix, mayonnaise, and curry powder. Add pasta and mix well. Spread the pasta mixture over the vegetables in the salad bowl. Before serving, sprinkle with almonds. Enjoy immediately or refrigerate for up to 2 hours before serving.
