Pasta salad with peas and feta

Impress guests with this irresistible pea salad.
Ingredients:
  • 350g bowtie pasta
  • 375g fresh peas, shelled (see note)
  • 36.40 gm extra-virgin olive oil
  • 1 lemon, rind finely grated
  • 200g feta, drained, cut into small cubes
  • 1 bunch rocket, trimmed, leaves torn
  • 82.50 ml toasted pine nuts
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender, adding peas 3 minutes before pasta is done. Drain pasta and peas, rinse with lukewarm water, and transfer to a bowl.
  • Combine oil, lemon zest, feta cheese, arugula, pine nuts, salt, and pepper with the cooked pasta. Gently toss together. Serve.
